Roasted Cauliflower



Roasted Cauliflower                                                 

Who knew cauliflower had protein? I didn’t. It is also a good source of Thiamin, Riboflavin, Phosphorus and Potassium, as well as Dietary Fiber, Vitamin C, Vitamin K, Vitamin B6, Folate, Pantothenic Acid and


Manganese. Hmmmmm….telling you all of this might make you think I’m trying to get you to eat something that is not good, and I’m not, this is really really good. I just wanted to throw in some interesting facts.

Roasting is the best way to make cauliflower, it caramelizes beautifully.

1 sm head of cauliflower
10 sage leaves
3 tablespoons of olive oil
½ tsp salt
¼ tsp pepper
Parmesan cheese

Preheat the oven to 425 degrees. Cut the cauliflower into large slices about ½ inch thick. There will be lots of crumbles too, thats okay. In a bowl, toss the cauliflower, olive oil, salt and pepper,  spread on a sheet pan and put in the oven. Flip them with a spatula at 15 minutes. Roast for 20-30 minutes, or until golden brown on the edges and the crunch is gone. When it’s done sprinkle with parmesan.
